Moraccan Fish Soup

5 cups cold water1 lb sweet potatoes (2 large) peeled and cubed2 red ripe tomatoes peeled and chopped1/4 cup lentils (optional)1 tsp chopped garlic1 tsp cumin1 tsp paprika1/2 tsp chili flakes (to taste)2 tbsp lemon juice2 tbsp fresh mint1/3 cup coriander or parsley chopped1 tsp grated fresh ginger1 lb halibut cut in to chunks
Fill a soup pot with water, add the first 10 ingrediants and bring to a boil, put on lid and simmer for 20 minutes until potatoes soften. Uncover and simmer another 10 minutes.
Add the fish and ginger simmer another 10 minutes or until fish starts to flake. To serve top with fresh chopped coriander on top. Makes 4 good dinner sized portions.
