Ingredients
Pacific cod (fish), 8 oz (1/2 lbs.Bacalao)Olive Oil, 1/2 cup (1/2 taza de aceite de Oliva)Onions, raw, 1 cup, chopped (1taza cebolla mediana picadita)Garlic, 2 cloves (2 Dientes de ajos)*Potato, raw, 1 cup diced(1 taza de papa picadita) 1 whole bay leaf(i hoja de laurel entera)
Directions
1-In a saucepan. put cod fish in water to boil.Once boiled; change water and repeat this process until cod fish is unsalted.Shred cod fillets with fingers.Put it aside for later.
(En una cacerola ponga a hervir el bacalao en agua.Una vez hierva cambie el agua y repita el proceso hasta que se desale el bacalao.Desmenuce el bacalao con los dedos.Ponga a un lado para usar luego.)
2-At the same time that you are boiling cod, in another saucepan, boil potatoes till tender.
Set aside.
(Al mismo tiempo que hierve el bacalao en otra cacerola, hierva las papas hasta que ablanden.Ponga a un lado.)
3-In a fry pan, heat the oil and sautee the onions and garlic.Once tender, add the bay leaf, potatoes and the cod fillets shredded.Mix well and cook for another 5 minutes.Serve 8 Serving spoons portions.
(En un sarten. caliente el aceite y sartee las cebollas, el ajo hasta que se ablanden.Agregue la hoja de laurel, las papas y el bacalao desmenuzado.Mezcle bien y cocine por 5 minutos mas.Sirve 8 raciones de cucharones de servir.)

    This is definitely not a pretty dish. I put mine inside a tortilla with lettuce and tomato. It was very good and from the nutrients I would say healthy. I wouldn't serve it to company though. I will definitely make again. Muey Bien - 8/18/09
