Rice Pudding (Arroz con Leche)

Ingredients
1 Cup (cooked) White RiceLemon Juice (about 1tbsp)1 Cup MilkGround Cinnamon or Cinnamon Stick (to taste)Allspice (optional - to taste)Nutmeg (optional - to taste)Ginger (optional - to taste)Granulated sugar (to taste, about .75 cup)
Directions
Pour rice into a pot on medium high heat. Add lemon juice. Stir. Add milk. Add spices. Let it come to a boil. Turn down the heat a bit so it doesn't but and stir often. When the pudding becomes thick, add sugar. Stir a bit more until it reaches desired consistency. Remove from heat. Serve hot or cold in 1/2 cup portions. Top with cinnamon.

Makes around 4-6 servings.
