Chicken Adobo

Ingredients
8 Chicken thighs, skinless and boneless1 cup soy sauce.5 cup white vinegar1 onion chopped1 green pepper, chopped1 tbsp pepper corns1 tsp ground gingeradd up to.5 cup brown sugar, to taste
Directions
Chop veggies. Into large pot add all ingredients, cover and bring to boil. Reduce heat and simmer until chicken is cooked through. Remove lid and increase heat to almost boiling, stirring frequently, reduce liquid to about 30% of original volume.

Serve over rice or pasta.

Variation, add .5 cup orange juice concentrate.
