Irish Country Broth

large carrot choppedlarge onion choppedlarge potato chopped1/2 green pepper chopped medium cucumber, chopped2 stalks celery chopped1/2 cup lettuce leaves of any kind or color chopped3 fresh tomatoes or canned tomatoes2 tablespoons olive oil1 tablespoon butter1 quart low sodium chicken broth 1/4 teaspoon turmericpinch of the following: basil, thyme, black pepper, parsleyor any dried or fresh herbs you like1/4 cup barley1/4 cup lentils1/4 cup small pasta
Place the oil and butter in a large soup pot.
Add the chopped vegetables and saute for a few minutes.
Add the chicken broth and herbs.
Add the barley, pasta and lentils.
Bring to a boil and simmer for 30 to 60 minutes
You may puree the soup as the Irish do or leave it chunky.You can add a bit of milk to each serving if desired.
This is very versatile as you can add or omit items.
You could use rice in place of the pasta.
I've even used radish in place of the cucumber.
