Healthy Turkey Taco Meat

Ingredients
1 1/4 lb. lean ground turkey3 Tbsp. extra virgin olive oil16 oz. salsa ( we use La Mexicana)1/2 medium tomato, finely diced
Directions
Begin browning turkey in a skillet with olive oil. When it is about halfway browned, add the salsa and tomato. It will very quickly form a lot of liquid. Simmer to reduce until the liquid is gone. Serve with your favorite toppings in your favorite tortillas or wraps.
Makes about 6 1/2-cup servings.
