I think it looks great for a marinade or a light finishing sauce. For those who are looking at the comments and not the actual nutrition, it is 68.1 cal per tablespoon, not 98. Oil itself with no additions is about 98. Stop freaking out about the calories please. If it is too much for you skip it. - 8/18/12

Jamie Oliver has a similar recipe for salsa verde that is much better and only uses 2 T of oil. - 4/12/11

WE LOVE THIS! CAN'T WAIT TO MAKE THE FLANK STEAK NOW. . THE FLAVOR IS WORTH THE 98 CALORIES! BESIDES...1 TBS GOES A LOOOONG WAY!! SO YOU DON'T EVEN GET ALL THOSE CALORIES PER PERSON!! - 10/19/10

This is fabulous. Although high in calories, the serving goes a loooonnnggg way. I use this on chicken, steak, and dab it on toasted bread. - 7/10/12

Remember as other users have stated, that amount is as a marinade for or glaze for a whole flank steak. No one person will be consuming the entirety of the sauce. The oil acts as a carrier to help herbs and spices infuse the meat. - 7/10/12

I think this sounds DELICIOUS and I can't wait to try it! It's mostly oil, so most of us won't use a whole 2 table spoons in a serving anyway, so I don't see the big deal calorie-wise. But that much garlic and the rest of the herbs sounds like a fantastic blend! - 10/13/10

Geeze folks up ur juices and use less oil. Or like i used it 2 tablespoons on a whole flank steaks that served six people. So no one got the full amount of the calories. - 12/18/10

I agree; very pricey calorie-wise for someone like me who needs to lose weight - not gain it. Aout 100 cals. for about 1 Tbsp is too much for me. Maybe Chef Meg could also state what the minimum amount of oil would be to make this sauce still viable; e.g., 2 T oil and 10 T water, vs. 3/4 cups oil. - 10/7/10

Anything with a mix of fresh lemon and lime make it appear salty...without using salt.... and it's SO refreshing! For those of you worried about the oil.... oil goes a long way so just reduce it. No biggie! - 5/1/14

It taste delicious but unless I am super slow, it took longer than 5 mins to prep the garlic, cut and juice citrus- not long but still. I also added a little zest. - 6/4/20
