Lemon-Dill Smashed Potatoes

3 lbs baby red potatoes1/4 cup of Extra Virgin Olive Oil2 tsp of lemon zest (I used fresh)1 TB kosher salt2 TB dill, chopped
Makes about 8 servings
Boil or steam the potatoes. While potatoes are boiling, zest a lemon and add to 1/4 cup of EVOO. Add dill. Let sit. When potatoes are soft, smash them with a masher or large spoon just so they burst. Pour oil mixture over potatoes, add salt, and stir to incorporate. Add more salt or dill to taste.
Serve hot!
