Chicken Gnocchi Soup

Ingredients
1/3 cup butter2 cloves of garlic (minced)1 lb. chicken (cut in small pieces)1/3 cup flour1 cup celery (diced)1 cup fresh spinach (chopped)2 1/2 cups skim milk1 1/2 cup heavy cream (half/half)3 chicken boullion cubesCracked pepper to taste2 cups of Gnocchi
Directions
On medium heat, melt butter in a soup pot
Add garlic and sauté
Add your chicken and cook through out
Stir in flour; mix well until the flour is cooked into the chicken.
Add milk and cream
Add celery and spinach
Add three bullion cubes
Add gnocchi
Mix ingredients well until soup thickens; stirring occasionally
Cover and simmer for 10 minutes

    I agree this is one of my favorites. Olive Garden now has it on their menu and call it "Creamy Chicken Gnocchi Soup"., I have been making mine with fat free evaporated skim milk to reduce the calories. It's still delicious. - 4/5/10

    I added thyme, a pinch of cayenne, and extra garlic and still found the flavor to be a bit lacking. It was a nice recipe to start from and get ideas from, but needs work. The cooking time seemed a bit too short for a soup too, so I cooked an extra 10 minutes or so. - 3/2/20

    Fabulous soup! We have made it several times using gnocchi, but we also made it with potatoes as a substitute to make a great potato chicken soup. - 2/19/17

    This was DELICIOUS!!! I cut up the celery into tiny pieces since that is the only way Hubby will eat it. Also,I added about 1/2 cup of shredded carrots. Will definatly be making it again. - 2/3/10
