Bill's Shrimp Creole Italian Style

Shrimp, peeled and deveined - 2 poundsDiced Onion - 4 cupsDiced Garlic - 6 clovesDiced Green Bell Pepper - 2 cupsDiced Celery - 2 cupsDiced Green Onion or Scallions - 1 cupChopped Fresh Parsley - 1 cupBay Leaf - 2Olive Oil - 1 TbsCreole Italian Seasoning - 1 TbsPinch of Cayenne PepperCrushed Black Pepper to tasteRagu Old World Traditional Sauce - 1 26 oz. jarPetite Diced Tomatoes - 1 canFarfalle Pasta, cooked to package directions, drained, not rinsed - 16 oz boxShredded Part Skim Mozzarella Cheese - 2 cups or 8 oz.
Heat olive oil in cast iron skillet over medium heat. Add onion, bell pepper, garlic, celery and green onions/scallions. "Sweat" seasonings over medium heat for about 20 minutes, stirring often, until vegetables lose their moisture and begin to shrivel a bit and turn brown. Add Creole Italian Seasoning, Bay leaf, Crushed Black Pepper, and Cayenne Pepper. Add Petite Diced Tomatoes and Ragu. Lower heat and let simmer for about 45 minutes. Add shrimp and continue cooking at low heat for about five minutes, until shrimp turn pink. Turn heat off. Add cooked pasta and parsley. Toss well. Top with mozzarella cheese and place skillet under broiler until cheese is melted and browning. Remove Bay Leaf before serving.
