Strawberry & Kiwi Salad

Ingredients
2 T. fresh lemon juice1/4 cup firmly packed dark brown sugar16 large strawberries, hulled and quartered4 medium kiwi, peeled, halved and sliced1 cup seedless green grapes, halved1/4 cup shredded or torn fresh mint leaves
Directions
Whisk or stir lemon juice with brown sugar in a large bowl until sugar dissolves. Add strawberries, kiwis and grapes and toss gently until fruit is combined and coated with sugar mixture. Cover and refrigerate salad for at least 1 hour. (I skipped this step). Just before serving, stir in mint. Serve cold.

Makes 8 servings (1/2 to 3/4 cup each, depending on size of berries)
