Sweet Jalapeno Cornbread

30g Fiber 1 Original Cereal, crushed28g Cornflakes Cereal, crushed1/4 C Whole Wheat Flour1 Egg White2 Tbsp Unsweetened Applesauce1/4 C Vanilla Soy Milk1/4 tsp Salt17g Jalapeno Peppers, chopped1 Tbsp Splenda1/4 tsp Baking Powder
1.Preheat oven to 400 degrees.
2.Prepare baking pan or muffin tins with Pam/nonstick cooking spray.
3.Mix dry ingredients together in a bowl.
4.In a seperate bowl, beat egg white and add wet ingredients.
5.Add the wet ingredients to the dry, and mix. Mixture will be extremely thick and a little dry, this is normal, just keep mixing till all ingredients are combined.
6.Press mixture into prepared pan or liners and bake for 25-30 minutes or until a toothpick comes out of the center clean.
*Use a food processor to crush the cereal*
*Makes 3 small muffins, you can easily double the recipe to make more.
