Chocolate Chunk Banana Bread

2 cups whole wheat flour1 cup Splenda2 teaspoons baking powder1/2 teaspoon baking soda1/4 teaspoon salt6 oz semi-sweet chocolate2 eggs1 cup mashed ripe bananas1/3 cup oil or melted/softened butter1/4 cup milk1/2 cup chopped walnuts/pecans
1. Preheat oven to 350 degrees F. Spray 9x5-inch loaf pan w/ cooking spray. Set aside.
2. Combine flour, Splenda, baking powder, baking soda, and salt in a large bowl. Set aside. Coarsely chop baking chocolate bars and nuts together in separate bowl.
3. Mix eggs, bananas, oil, and milk in a large bowl until well blended. Add dry ingredients; stir until just moistened. Stir in chopped chocolate/nut mixture.
4. Pour into greased loaf pan.
5. Bake for 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack.

Sorry you didn't like this RottyGirl75. Maybe swapping out some of the whole wheat flour for soy flour or something a little less dense? I make up the recipes as I go so I'll re-make direct from the recipe and see what happens and adjust as needed.
