Low-Sodium Apricot Chicken

Ingredients
EVOOchicken breasts - 4salt & pepper1 large onioncider or white wine vinegarchicken stockapricot all fruit spread or preserves
Directions
add oil & chicken to large skillet over medium high heat
add salt & pepper -- lightly brown chicken a few minutes on each side, ten add onions. Cook 5 minutes
add viengar to the pan & let it evaporate. Add stock.
When stock comes to bubble, add preserves & stir to combine
Cover pan, reduce heat & simmer 10 - 15 minutes.
