1 large boneless, skinless chicken breast, 1 red bell pepper, chopped, I small zucchini, chopped, 1 baby eggplant, chopped, 1 tbl olive oil and 2 tsp chopped garlic, 1 regular can chopped tomatoes, drained, 15 or so large black olives, 1/2 package cooked penne pasta (I like Bertolli plus)
Cut chicken breast into cubes and sautee in olive oil and garlic until no longer pink. Add fresh veggies and sautee until chicken is completely cooked. Add canned tomatoes and olives (opt) and heat through.
Serve over pasta. Makes about 4 large servings.
