Turkey Tenderloin with Stir Fry Veggies and Rice

Ingredients
1.25 lbs extra lean turkey breast tenderloin, 4.5 cups deluxe stir fry veggies3 cups cooked white minute rice1 tbs extra virgin light olive oil
Directions
Cook 3 servings of rice as directed on box. In a large skillet heat 1 tbs olive oil. Add cubed turkey and brown. When turkey is browned add veggies, reduce heat and cover. Cook until veggies reach desired tenderness. Serve over rice. Makes 3 servings.
