Chicken Veggies & Dumplings

Ingredients
Whole Chicken2 stalks celery (diced)3 med potatoes (diced)1 med onion (diced)1 bag frozen peas & carrots1 roll refridgerated biscuitsopt: chicken bullion / Mrs Dash
Directions
Place whole chicken and veggies and spice (if desired) in crock pot and add appx. 3 cups of water. Cook on high for 6-8 hours. Remove chicken and de-bone, placing meat back into crock pot. Place canned biscuits on top of mixture replace lid and simmer til biscuits have fluffed up. You can also mix the biscuits into the soup mixture if you prefer a doughier dumpling.
This makes about 8 servings.

    This was so easy and tasted great, although I had a hard time getting the biscuits to "fluff", but maybe I didn't cook long enough. Still good though. - 5/21/07
