Kale Sweet Potato and Lentil Soup

Lentils-1cupSweet Potatos-3 potatoes, peeled & choppedOnion-1 peeled & choppedGarlic-2 cloves sliced or mincedKale-2 bunches or 4 cups chopped (I like to break the leaves in bigger pieces)Curry Powder-1 Tbsp or to tasteLow Sodium Vegetable Broth-6 cupsOlive Oil-2 Tbsp
Saute onion & garlic in a pot with olive oil. Add remaining ingredients except kale. Bring to a boil. Turn down to simmer for 15 minutes. Add kale. Simmer for another 15 minutes.
Tip:If you want sweet potatoes more firm than soft, add them after 10 minutes before you add the kale. The soft sweet potatoes add sweetness to the broth base of the soup. DELICIOUS!!

Really yummy! I used tiny red lentils because that is what I had around. They really cooked down, and made the soup very creamy without cream. :) I also added 1tsp of cumin and a few dashes of cinnamon, because I love me some cumin. Very easy, very tasty! I will totally make this again. - 11/15/10

I thought this was fine with the amount of liquid that it called for, but I did add in an extra 2 cups because I wanted a looser soup. I also used different herbs (just red pepper flakes, cumin, sage, and a bit of lime juice) since I've been eating a lot of curry, but it was yummy and easy to make! - 2/2/12

I'm making this right now. However, I did make some changes. I used 12 cups of water and one bouillon cube...not sure how 6 cups of liquid could cover everything...it's packed with 12 cups. I only needed 1 T of olive oil for the onions and garlic(used 4 cloves, sliced). It's smells great so far! - 1/31/11
