Chicken and Spinach Linguini

Ingredients
1 tbsp extra virgin olive oil (divided)2 cloves garlic, minced 1 lb of boneless, skinless chicken cutlets, tenders, or breasts 3 cups of fresh spinach 1/2 cup of Part skim mozzarella or fat free mozzarella 2-3 tbsp garlic powder1 tbsp garlic salt 1/2 package of Linguini noodles
Directions
1. Start your water for the noodles, adding a little salt for flavor.
2. Cut chicken into small bite-size peices and season with garlic powder and salt - you can do this to your taste and not use the given measurements; however, you want a good coating of garlic powder for the chicken.
3. Chop spinach and set aside.
4. Heat olive oil in a large nonstick pan and brown minced garlic.
5. Add chicken to pan and saute until browned completely
6. Noodles should be cooking by now
7. After chicken has nice brown color add chopped spinach and let it stick and wilt to the chicken
8. Add cheese and let it melt and brown over chicken and spinach.
9. In bowls, place cooked linguini topped with chicken saute - top with a drizzle of the olive oil, oregano, and grated parmesian cheese.

This should serve 4-6
