Whole Grain & Honey Blueberry Muffins

*Flour, white, 1 cup *Whole Wheat Flour, 1/2 cup Baking Powder, 2 tsp Salt, 1/4 tsp 1 Egg1/2 cup skim MilkHoney, 1/2 cup 1/4 cup Granulated Sugar1 1/3cup Blueberries, fresh1/2 tsp lemon zest
Makes 12 individual muffins.
In a mixing bowl, stir together all-purpose flour, whole wheat flour, baking powder, and salt. Make a well in the center.
In another bowl, combine beaten egg, applesauce, honey, milk, and lemon peel.
Add the liquid mixture to the dry ingredients all at once. Stir just until moistened (batter should be lumpy). Fold in blueberries.
Grease muffin cups or line with paper bake cups and fill 2/3 of the way full.
Bake in a 400 degree oven for 18 - 20 minutes or until golden.

I don't see applesauce listed in the ingredients but it is listed in the directions. How much is in the recipe? And, sugar is listed in the ingredients, but not in the directions. Do we use the applesauce in lieu of sugar? Or are both in the recipe?

Hi Back2Basics,
It is meant to replace the butter. The applesauce is a 4.oz or 133g single-serve container of Mott's applesauce. Now that being said, sweetened or unsweetened, that is up to you. Sweetened (single serve) is 90 calories which when divided by 12 will raise the calories a bit.
