Easy-as-pie Jambalaya

1 package of Turkey Kielbasa (can use 1/2 a package or less)1 c. chopped onion2/3 c. chopped bell peppers1 stalk of celery, chopped1-2 carrots, chopped2 cloves garlic, minced1 (14 1/2 oz.) can of stewed tomatoes, undrained (can use spaghetti sauce in a pinch, or if you have a husband who doesn't like tomatoes, like mine)1 (10 3/4oz.) can of lower sodium chicken broth1/2 t. dried thyme6-8 drops hot pepper sauce (can add more if you like the heat)2 bay leaves2 c. white rice2 T. dried parsley
This dish serves 4.
In a large skillet, cook the meat, onion, and garlic until done. Add tomatoes, chicken broth, and rice. Stir once or twice. Add all other ingredients. Stir. Cover and bring to a boil. Lower temperature to a simmer and leave lid on for 15-20 minutes, or until rice is cooked. Take out bay leaves and throw away. Enjoy hot!!
