Whole Grain Peanut Butter Chocolate Chip Cookies

1 cup whole wheat pastry flour1/2 cup dry oats1/2 cup natural creamy or crunchy peanut butter4 oz. bittersweet chocolate chips1/4 cup butter1/4 cup nonfat greek style yogurt3/4 cup evaporated palm sugar or sucanat1 egg1 tsp. baking soda1/4 tsp. salt1 tsp. vanilla
*Pre-heat the oven to 365 degrees F.
*In a bowl, beat the yogurt, butter, and palm sugar until fluffy. *Add the egg, vanilla, and peanut butter and beat until well combined.
*Finally, add the pastry flour, oats, baking soda and salt and mix until combined.
*Gently stir in chocolate chips.
*Portion by rounded tablespoons onto an un-greased cookie sheet. Flatten slightly with a fork or hand.
*Bake for 12 minutes or until the edges turn golden. Remove immediately to a cooling rack.
*Makes 24 cookies
