brigitte's potato salad

Ingredients
6 large potatoes peeled boiled3 hard boiled eggs2 slices bacon1 c chopped red onion1/2 c mayonnaise4 tbsp white vinegar1/4 c sugarsaltpepper1/2 c fresh parsley
Directions
peel and halve 6 large potatoes and boil until soft
while potatoes boil cook 2 slices of bacon until cooked through but not crispy
boil 3 eggs until hard boiled
drain potatoes and add 1 c chopped red onion
dice up cooked bacon and add to mixture
Let mixture come to room temperature
When cooled add diced up hard boiled eggs, .5 c mayonnaise, 1/4 c sugar and 4 tbsp white vinegar stir until combined but no more so that mixture does not get too smooth
add salt and pepper to taste and 1/2 c fresh chopped parsley
Let sit covered in fridge for at least 15 min
