Bean Enchilada Bake, First Place

Ingredients
1 cup chopped onions2 cups black beans2 cups tomato sauce2 teaspoons chili powder1 teaspoon cuminsalt to taste1 cup fat free sour cream8 corn tortillas5 ounces shredded low-fat cheddar cheese
Directions
Combine first three ingredients and cook until soft. Add beans, tomato sauce and spices. Simmer 15 minutes, stirring occasionally. Line a shallow 2.5 quart baking dish with four tortillas. Spread half of sour cream on tortillas, top with half of bean mixture. Repeat. Top with shredded cheese. Bake at 350 degrees for 25 minutes.
