turnip soup

Ingredients
1 chopped onion, 2 cloves of garlic chopped, 1 carrot chopped, 1 stick of celery chopped, 1 cup of turnip cubed, 4.5 cups (1 lt) of chicken broth, 1 tbsp extra virgin olive oil, frech herbs, pepper, 1 tbsp maple syrup. Sour cream or plain yogourt optionnel.
Directions
In the olive oil, cook the onion till translusant (5 minutes) on medium heat. Add the minced garlic and all the veggies. Cook another 5 minutes. Add the chicken broth, pepper and cook on low heat for about 45 minutes. Add herbs of your choice, i like parsley and chives. Puree in the blender or with a hand blender. Rectify the seasonings and finish with a little maple syrup. You can garnish with fresh herbs and a dullop of sour cream or plain yogourt.
