Red Pepper Alfredo Sauce - Low Fat Recipe

Ingredients
1 1/2 Cups Non-Fat Cottage Cheese3 Tb. Milk (1%)1/2 Cup Red Sweet Pepper1 Clove Garlic - minced1 Tb. Olive Oil1/2 Cup Frozen Peas & Carrots (mixed bag)1/8 ts. each Salt and Pepper4 Tb. Parmesan Cheese1 Tb. Snipped Fresh Basil
Directions
In a blender container combine cottage cheese and milk; blend until smooth.

In a 2-quart saucepan cook sweet pepper and garlic in hot margarine until tender.

Reduce heat. Add milk mixture, peas & carrots, half the cheese, salt, and pepper.

Cook and stir untill heated through (do not boil).

Toss with 8 ounces of your favorite pasta.
Sprinkle with remaining Parmesan and basil.
Makes 4 servings.
