Bulgur with Chicken and Black Beans

Ingredients
Ingredients: 4 tsp Olive Oil1 med sweet Onion, chopped6 cloves Garlic, minced1 tap1 cup sliced canned Mushrooms1.5 cup Bulgur3 cups Fat Free Low Sodium Chicken Broth8 oz skinless, boneless Chicken Breast1 can Black Beans1 tsp Southwestern Seasoning, or to taste
Directions
Preheat oven to 350.

Saute onion & garlic in olive oil. Add mushrooms and chicken. Cook until chicken is almost done. Add bulgur and saute 1 minute. Season with southwestern seasoning blend to taste.

Add chicken broth, bring to a boil. Cover pan and bake 20-25 minutes.

Makes 9 1-cup servings

    This was pretty good, but the recipe needs to clarifications:
    1) Should the bulgur be dry or cooked?

    I liked the recipie but the directions were incomplete. I changed it a bit. I decreased the bulgur, increased the chicken, and added carrots and spinach. I also used curry spice instead of taco. It was pretty good and very healthy. - 3/24/11
