Banana Angel Food Cake

1.5 cups Egg Whites (room temperature)0.5 tsp Cream of tartar0.25 tsp baking powder1 tsp Vanilla Extract0.5 tsp Ground Cinnamon0.25 cup rolled oats3 ripe bananas, mashed1 cup flour2 cups Confectioner's Sugar0.25 tsp salt.
1) Preheat oven 325 degrees F
2)Beat Egg whites until stiff, not dry
3) Combine creamof tartar, baking powder, vanilla, cinnamon, and mashed bananas.
4) In seperate bowl combine flour, confectioner's sugar, and salt.
5) Fold banana mixture into egg whites. Then fold flour mixture into egg and banana mixture. Pour Batter into 9 or 10inch round cake pan, coated with non-stick cooking spray.
6) Bake at 325 degrees for 1 hour, until cake is firm and lightly golden. Cool for 5 minutes then slip out of pan onto serving plate. Garnish with light dusting of Confectioner's Sugar.
Makes 12 cake slices.
