Pancake Mix Blueberry Muffins

1 cup Fiber One pancake mix1 cup of fat free milk1 pint of fresh blueberries1/4 cup of fat free cottage cheese w/ pineapple (it makes the muffins slightly sweeter and more moist)
Preheat the oven to 375F. Combine the pancake mix and milk until batter is well blended. Stir in the cottage cheese and then add the blueberries. Line a muffin pan with paper liners (or not if you don't have any on hand) and fill them about 2/3 way up. Bake for 20-25 minutes until tops are nice and brown. let stand in the oven for 5 more minutes and then remove them to cool down.
Makes about 12 muffins (depending on how much fruit you use).
