Vegan Pancakes (Plain)

1 c. non-dairy milk (or more)1 tbsp. vegetable oil or soy butter1 c. whole wheat flour1 tbsp. sugar2 tsp. baking powder½ tsp. saltLight vegetable oil for cooking
Makes 2 main dish servings for breakfast.
In a large bowl, whisk together the wet ingredients. In a separate bowl, mix the dry ingredients. Sprinkle the dry ingredients into the wet ingredients. Stir only enough to moisten the dry ingredients. Cook on a skillet over medium heat.
Variations:
Crêpes: Add about ¼ c. more liquid for a thinner batter.
Oatmeal: Substitute ½ c. flour with ½ c. oatmeal.
