Egg, fresh, 2 large Flour Tortillas, Burrito Size, 1 serving Garlic, 1 clove Onions, raw, .25 cup, chopped Sesame Oil, 1 1tsp Spinach, fresh, 3 cup Sweet peppers (bell), 0.25 cup, choppedCarrots, raw, 0.25 cup, cut in thin strings
Makes one large burrito.
Cook spinach and drain well, blotting with papertowels till dry. Do not skip this step, or burrito will be soggy! Saute onions, garlic, carrots, and bell peppers in oil until onions are translucent, add spinach and heat through. Add eggs and cook, stirring till done. Wrap up in tortilla! Mmmmmm! May add cheese and/or salsa, but nutrition info doesn't include those.
