African Thai Stew

1 tsp olive oil1 onion1 large sweet potato2 stalks celery1/2 small green pepper2 tsp fresh garlic3 cups reduced sodium chicken broth1 can chickpeas drained (19 oz)1 tsp ground cumin1 tsp curry powder1 tsp ground coriander1 tsp chili powder2 tsp fresh ginger1.4 tsp fresh ground pepper1Tbsp lime jiuce1/4 cup sultana raisins3 Tbsp light peanut butter
Heat oil in large stove top pot - medium heat.
Finely chop onion and add, peel & cube sweet potato and add as you cut. Dice celery & green pepper adding to pot as you cook. Add garlic. Cook & stir a few minutes.
Add broth, tomatoes and drained chickpeas. Add spices and lime jiuce, stir and bring to a boil. Reduce heat to low and simmer, covered for 25 minutes.
Add raisins and peanut butter and cook a few minutes longer.
