Ingredients
1 lb Chicken Breast (frozen is ok)1 11 oz jar of chunky salsa (Newman's Own Medium is my favorite)1 15 .5 oz can of Garbanzo Beans (Chick peas)1 15.5 oz can of Black Beans10 drop or so of Tabasco sauce (to taste)Salt and pepper (to taste)
Directions
This is very simple. Just put all ingredients in a crockpot, chicken on the bottom, everything else dumped on top. Set to low, and cook for about 7 hours. When it's ready, break the chicken apart with a fork and mix together. Serve over 1/2 cup of rice or pasta for a quick but healthy meal. (Note: rice and/or pasta not included in calorie count.)

I served it with tortillas and veggie extras. This is a PERFECT dump-and-go crock pot meal. I used frozen chicken, and it turned out great! - 5/30/12
