Ingredients
* Egg, fresh, 1 large * Milk, nonfat, 1 cup * Vegetable Oil, .25 cup * Flour, white, 2 cup * Granulated Sugar, .25 cup * Baking Powder, 3 tsp * Salt, 1 tsp
Directions
Heat oven to 400 degrees. Grease bottom of muffin cups. Beat egg with fork. Stir in milk and oil. Measure flour by dip-level-pour method and blend dry ingredients. Stir in just until flour is moistened. Batter should be lumpy. Do not over mix. Fill muffin cups 2/3 of the way full and bake 20-25 minutes or until golden brown. Muffins will have gently rounded and pebbled tops. Serve warm. Makes 12 muffins.
