cantaloupe and cucumber salad

Ingredients
lime juicesalt and pepperenglish cucumberripe cantaloupesscallionsfresh cilantro
Directions
In large bowl whisk lime juice, salt and pepper until blended. set aside
Peel cucumber in alternating strips and coarsely chop.
Coarsely chop the melons
Thinly slice the scallions
Chop the cilantro
Add cucumber, cantaloupe scallions and cilantro to lime juice mixture and toss to coat.
Enjoy! Makes 8.5 cups
