Tomato Watermelon Gazpacho

Ingredients
2 c watermelon (about a 2.5 lb piece)2 tomatoes (about 1.5 lb) quartered2 Tbl unsalted almonds, ground1/2 shallot, quartered1 Tbl lemon juice1 Tbl red wine or sherry vinegar1 tsp olive oil2 Tbl feta, crumbled1 Tbl black olives, pitted & chopped2 tsp fresh mint
Directions
Blend watermelon, tomatoes, almonds, shallot, lemon juice, vinegar and olive oil in a food processor until smooth. Divide amoung 4 bowls and top with feta, olives and mint.
