Anna's Vegetable Beef Soup

Ingredients
1 Tbsp vegetable oil12 oz. beef chuck, cut into bite-sized pieces1 cup chopped onions5 cups Low Sodium V8 Juice1 cup beef broth2 cups water1 cup chopped carrots1 cup chopped summer squash or zucchini1 cup frozen corn3/4 cup chopped celery2 oz small pasta, such as orzo or alphabets.Herbs & Spices to taste (I use allspice, basil, oregano, garlic & pepper)
Directions
Heat oil in a skillet. Add chopped onions and beef and cook until browned.
In a large pot, combine V8, beef broth, and water. Add cooked beef & onions and all vegetables and simmer over low-medium heat until vegetables are tender (about 45 minutes). Season to taste.
Add pasta and let simmer until pasta is done, about 15-20 minutes.

Makes 6 - 1 1/2 cup servings
