Italian Chicken and Leeks

Ingredients
1 lb chicken, cut into chunks3 leeks, cleaned and sliced thin2 celery stalks, sliced thin1 tomato, chopped10 basil leaves, chopped3 oz wine
Directions
Put all veggies and chicken into large, nonstick skillet. Add wine and cover to help steam.
Add basil when chicken is almost cooked through.

    I'm a missionary and not allowed to have wine in my home. I tried apple cider vinegar as a replacement, but it was a bit powerful. I will try chicken broth next time. - 9/11/19
