GF Gingersnap Cookies

3/4 cup butter1.5 cups sugar2 eggs1/2 cup molasses2 tsp apple cider vinegar3 3/4 cups featherlight flour mix (1 part white rice flour, 1 part tapioca starch, 1 part cornstarch)1 tsp xanthan gum1 1/2 tsp baking soda2 tsp ground ginger1/2 tsp ground cinnamon1/4 tsp ground cloves
Preheat oven to 350F
Mix flour, xanthan gum and baking soda. Cream the butter and sugar in another bowl (works well in a KitchenAid). Add the eggs, then the molasses, then apple cider vinegar to creamed butter and sugar mixture. Throw the spices into the mix. SLOWLY, stir in the combined flour ingredients until the mixture is JUST blended.
Roll the dough into small balls (about 1"). Place on greased cookie sheet or silpat. Bake 10-12 minutes.
