Zucchini Casserole

2.5 cups sliced zucchini1 lb ground turkey1 medium onion, chopped1 green pepper, diced2 cups Prego Traditional flavor1 small can sliced mushrooms2 cups shredded mozzarella
Slice zucchini in 1/4 in. slices. Saute in Pam until tender. In separate skillet, cook ground turkey, onion, and green pepper. Drain. Stir in tomato sauce, mushrooms and seasonings. Layer half of zucchini in 13 x 9 inch pan. Spoon half of ground turkey mixture over vegetables. Sprinkle with half of cheese. Repeat layers of veggies and ground turkey. Bake uncovered at 350 for 30 minutes. Sprinkle with remaining cheese and bake an additional 5 to 7 minutes.

I modified this recipe slightly, but still loved it. I used Italian ground turkey and 2 cans of mushrooms. I think I could have used more zucchini too. I wasn't able to do layers, but then I used a 9x13 pan.
This reminds me of the Zucchini casserole we used to make when I was a kid. Loved it! - 10/9/07

This was AWESOME! I tried it one night when my mom and younger brother were coming over for supper. My little brother is very picky! I gave him a little scoop and didn't say a thing.
