Ingredients
1 cup navy beans (or any dried white bean)1 1/4 cup low sodium tomato juice1/2 cup molasses1 onion chopped1 apple, peeled and chopped1 tbsp dry mustard3 tbsp white vinegar3/4 cup water (or more)
Directions
Soak beans overnight.
Discard water.
Place in saucepan, cover with fresh water, bring to a boil. Cook until soft.
Drain beans again.
Mix tomato juice, molasses, dry mustard, and vinegar together.
Add onions and apple to beans.
Add sauce and 3/4 cup water.
Bring to a boil, then cook on low for 30 minutes. Add water if drying out.
