No-Sugar and No-Oil Zucchini Bread

Ingredients
1 cup grated zucchini24 packets Truvia1 Tbsp powdered egg1 Tbsp Lecithin1/3 cup water1 1/2 cup all purpose flour1 tsp cinnamon1/2 tsp baking soda1/2 tsp ground nutmeg1/4 tsp baking powder1/2 tsp salt
Directions
Beat together zucchini, truvia powered egg, water, and lecithin.

Combine flour, cinnamon, baking soda, nutmeg, baking powder, and 1/2 teaspoon salt. (I have used pumpkin pie spice in the past and used 1.5 tsp to completely replace nutmeg and cinnamon if I didn't have the two spices.)

Stir into zucchini mixture.

Pour into a greased loaf pan.

Bake at 350 until done for 30 to 40 minutes.

Cool on rack for 10 minutes and remove from pan.

I can usually cut 12 slices.
