Tasty Banana Bran Muffins

Ingredients
1 1/2 cups wheat flour3 tsp baking powder3/4 tsp salt2 3/4 cups Kashi Good Friends Cereal (or any high fiber cereal with 10-12 grams of fiber per serving)3/8 cup honey3/8 cup unsweetened applesauce2 medium mashed bananas1 cup skim (non-fat) milk3 egg whites
Directions
Pre-heat oven to 400F. Combine milk and bran cereal in a bowl and let sit for 2-3 minutes. Sift dry ingredients together. Add honey, applesauce, chopped apples and egg whites with mik and bran cereal mixture. Add dry ingredients and stir till just combined. Batter will be thick. Spray muffin tin with cooking spray. Fill muffin pan and bake for 20-25 minutes.
