Wheat Pancakes

Ingredients
1/2 cup all-purpose flour 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon salt 1 1/2 - 2 cups skim milk 1 egg white 1 teaspoon oil
Directions
- 1 cup whole-wheat flour
1. Mix all ingredients together in large bowl, stirring as little as possible while removing large bumps in mixture.
2. Pour 1/4 cup of batter onto hot griddle using a spoon or a ladle, and flip when bubbles appear and the bottom is lightly browned. Continue until batter is used up.
Makes 4 servings.

I made these pancakes for dinner tonight and thought they were great! I made the following changes: used Splenda instead of sugar; reduced baking soda to 1/8, used a whole egg; reduced salt to just a dash and added 1 teaspoon of cinnamon. Does anyone know how to re-calculate the calories & sodium? - 6/25/09
