Good Morning Blueberry Cornmeal Pancakes

Ingredients
Trader Joes 100% white wheat flour, 1 cupYellow Cornmeal, .5 cupGranulated Sugar, .25 cupBaking Powder, 1.25 tspArm & Hammer Baking Soda, 0.5 tspMilk, nonfat, 1.5 cupLemon juice, 1 tbspLand O Lakes Fat Free Half & Half, 4 tbspEggbeaters, 0.25 cupBlueberries, frozen (unsweetened), 2 cup, unthawedMelted Butter, unsalted, 1.5 tbsp
Directions
Add the lemon juice to the milk. Stir gently & let 'sour' into a home version of buttermilk (or use fat free buttermilk if you have it!)
Whisk together flour, cornmeal, sugar, baking powder and soda in a large bowl. Set aside.
Whisk together buttermilk, milk, butter and egg in medium bowl.
Add milk mixture to dry ingredients and whisk together just until combined.
Toss blueberries in a small bowl with 2 tsp sugar.
Heat a griddle over medium heat. Spray surface of griddle to keep pancakes from sticking. Repeat as necessary throughout process.
Pour batter on griddle 1/4 cup at a time.
Add some of the sugared blueberries to each pancake.
Cook for about 3-4 minutes.
Flip and cook the other side for about 2 minutes.
Makes 16 pancakes
