Quick Chicken Chasseur

Ingredients
1 pound boneless skinless chicken breasts cut into strips.1/3 cup corn starch1/4 cup vegetable oil1/2 tsp tarragon and thyme1/4 tsp pepper1 cup (or more) sliced scallions3/4 cup Sherry cooking wine1 cup mushroons canned or fresh chopped up.3 tomatoes cut into eighths3-4 cups hot cooked rice
Directions
Dredge chicken in corn starch. In large skillet, brown coated chicken in oil. Stir in seasonings and scallions. Cook 2 minutes longer. Add broth and sherry cooking wine. Cover. Simmer 10 minutes. Gently stir in mushrooms and tomatoes. Cover. Simmer 10 minutes longer.
Serve over hot rice.
Sauce may be served separately.
