Reduced Fat Sugar Free Tapioca Pudding

Ingredients
2 3/4 c Unsweetened Almond Breeze, original or vanilla1 egg, well beaten3 Tbsp Minute Tapioca5 T Equal or Splenda Granular1 tsp vanilla extract
Directions
Combine Almond Breeze, egg, tapioca and Equal in a saucepan and let sit for 5 minutes. Cook over medium heat, stirring constantly, until mixture comes to a full boil that does not stop bubbling when stirred. Remove from heat. Stir in vanilla. Cool 20 minutes, then stir again. Serve warm or chilled.

The mixture will be thin and will thicken as it cools

Makes 6 half-cup servings.

    Good flavor! Have never made a tapioca pudding before, but it is a favorite request from my hubby. Tried this b/c he likes almond milk and we use sugar substitutes. This seemed a little thin to us, and figured out that he wants a pudding with pearl - not minute - tapioca. - 1/6/20
