Ingredients
1 1/2 c. flour1 tsp. baking powder1/2 tsp. baking soda1/4 tsp. salt2 tsp. ground cinnamon2 eggs3/4 c. sugar1/2 c. vegetable oil2 tsp. vanilla1 1/3 c. shredded yellow squash
Directions
Combine the first 5 ingredients set aside. Combine eggs, sugar, oil and vanilla in a large bowl. Beat well, stir in shredded squash. Add dry ingredients, stir until moistened. Pour batter into a greased and floured loaf pan, bake at 350 degrees for 50 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan 10 minutes, remove and let cool on wire rack.

    Love this - I used brown sugar blend Splenda, sugar-free applesauce instead of oi, and whole wheat flour. Baked in muffin tin and mini-muffin pans. Wrap & freeze, easy to pull out as needed. Great with some fruit for a quick breakfast! - 9/27/09

    Very nice. It is not a very sweet bread, it has a much more mild flavor and mild sweetness. I substitued Splenda for sugar. I used a scant 1/4 cup olive oil, and filled in the rest of the "oil" with 1/4 cup applesauce. The texture was perfect. Also added 1/2 tsp nutmeg, yummy. - 8/7/09

    I LOVE THIS!!! So I definitely did NOT follow the recipe, ha; i subbed light brown sugar in completely because i had no regular sugar, and i didn't have baking powder so i only used baking soda. I used whole wheat flour instead of reg and added dark choc chips. DELICIOUS! - 9/1/11
