tuna and basil pesto fettucine

Ingredients
400g fresh fettucine1/2 cup of fresh basil pesto50g drained capers1 cup of finely choped scallions4 medium red ripe tomatoes chopped into 1cm pieces100g chopped gherkins
Directions
In a bowl that can easily accomodate the cooked pasts, mix flaked tinned tuna, scallions and capers.

In another bowl mix tomatoes and gherkins and salt lightly. Set aside for serving.

Boil fresh pasta in salted boiling water. It should be finished in 3-4 mins if fresh. Drain and mix through 1 tbsp olive oil to avoid pasta sticking.

Place pasta in the bowl with tuna mixture, place pesto on top of pasts then mix ingredients thoroughly with tongs.

Plate up for four with gherkin and tomato mixture on the side.

Is just as good hot or cold although I prefer this cold.
