Baked Meatloaf and Sides

2 lbs Ground beef, thawed10 Ritz Crackers, crumbled2 eggsSeasoning to taste8 peeled potatoes (halved or quartered)1 Large bag of baby carrots
Pre-heat oven to 350 degrees.
1. Add ground beef, crumbled crackers, eggs and seasoning to a bowl. Mix ingredients together until well blended. Make one large ball. Transfer to 13x9 baking dish. Mold meatloaf into a "log" or "roll" in center of pan. Meatloaf should be the entire length of pan.
2. Line both sides of meatloaf with potatoes.
3. Top the potatoes with baby carrots.
4. Cover with Aluminum foil. Bake 45 mins to an hour until meatloaf is no longer pink in middle.
Serves 8.
